Food hygiene for thought
The Northampton College Business Centre is offering local food businesses Level 2 Food Hygiene qualifications – a necessity for all food handlers in the commercial world.
The Level 2 Awards in Food Safety in Manufacturing and Food Safety in Catering are aimed at all sizes and types of business – from large food manufacturers or processing plants employing hundreds of staff to smaller restaurants and catering businesses with just a few employees. Accredited by the Chartered Institute of Environmental Health (CIEH), and delivered by experienced industry professionals, the courses cover a range of topics including legislation, heat processing, refrigeration, temperature control, food storage and cleaning.
Fred Addy, owner and chef at RPT67 Catering in Milton Keynes, attended the Food Safety in Catering course back in April, and has signed up two of his employees to complete the course. "As a catering business, we have both a legal and moral obligation to the public. The course completely opened my eyes to the dos and don’ts of the industry – I’m sure these are all documented somewhere or other, but using real life examples made it all a lot more pertinent and enabled me to relate the theory back to the situation in my own kitchen. One tends to acquire certain bad habits in the domestic kitchen and these are totally unacceptable in the commercial kitchen environment. As a result of the course I’ve been able to implement changes both at home and at work."
Course Co-ordinator Rachel Sanders said; "It is essential to food safety that all food handlers are aware of the hazards and controls associated with the types of food they produce. Nowadays, it’s amazing just how many occupations involve food handling on an everyday basis – even a childminder will be involved in a degree of food preparation. These courses equip candidates with the invaluable knowledge required by food handlers. Legislation and legal requirements are ever-changing, so it is important they attend a relevant course at least once in their careers, and ideally ‘top-up’ their knowledge with refresher courses. Where the implications of poor food hygiene can be utterly frightening, food businesses should really be asking themselves if they can afford not to do this training."
